Southwest Salad – Great for Meatless Mondays

This salad is my mom’s recipe.  It’s funny because she mostly made it when we were at the lake.  That makes sense because it requires few ingredients, it is easy, holds a few days in the fridge, and is refreshing.  It tastes like summer to me.  One day I decided that we could eat this when we were not at the lake.

Ingredients:

1 can pinto beans – drained and rinsed

1 bunch green onions – diced (whites and green)

1 avocado – diced

I seeded and diced tomato

1 small can sliced olives

Bottle of  Creamy Italian Dressing (I use Wishbone)

Shredded Cheddar Cheese – 1-2 cups depending on how much you like cheese

Fritos

Directions:

Combine the beans, olives, tomato, avocado, green onion.  Put 1/2 bottle of dressing on it.  Stir and refrigerate.

Top with shredded cheddar and Fritos if you feel like it:)
