You Can’t Beat a Beet….Roasted Beets with Goat Cheese

I love roasted beets.  We toss them in salads or top with them with goat or feta cheese.

How do you roast beets?  EASY…PEASY

Preheat oven to 425

Peel and cut the beets into chunks

Place them in a pan with edges

Drizzle with 2 TBLS olive oil

Sprinkle kosher salt (for the pictured tray, I used 1 TBLS of kosher salt)

Check after about 25 minutes and them keep roasting until the beets are fork tender.

I usually stir them around with a spatula while roasting

You can store these in the fridge for several days and toss on salads.

Beets are in season, and they really are like candy when roasted.
