Oriental Cucumber Salad

Did you know The cucumber is originally from India? I just read that tidbit. Today, in the US, there are mainly 3 catagories of cucumbers- slicing, pickling, and English. We have some of the slicing and piclkling varities. I think they hold better than English cucumbers, personally.

This salad is so light. I served it with some shrimp and rice that also had Asian flavors. You can let it marinate for 10 minutes up to overnight.

I love julienne cut veggies. I cut the cucumbers lengthwise with a mandolin and the cut thm crosswise. It is really a cinch.

Oriential Cucumber Salad

1 large or 2 small cucumbers, julienned

1 tablespoon bragg’s amino acids (or soy sauce)

2 tablespoons fresh lemon juice

2 tablespoons of vegetable broth

1 clove of garlic, minced

1 leaf of basil, rolled and cut

Pinch of red pepper flakes

Pinch it coriander

Optional Ingredients

sesame oil for drizzling

Chopped green onions

All you do is mix up everything except cucumbers, then mix with cucumbers and allow to marinate for at least 10 minutes.

If you have some fresh cucumbers, gives this salad a try. It is delish without any added oil or sugar:)
