Sometimes I see a recipe I just have to try. I first made this last summer. I loved, but is what not to like about an ingredient list of pie crust, tomatoes, cheese and mayo, right?

I added some key steps you I think you need to know.
I found it helpful to pre-bake the pie crust, especially if you have juicy tomatoes. I use pie weights and bake at 450 for 10 -15 minutes. Make your favorite pie crust or buy a pre-made crust if you are not into making pie dough.
Slice 3-4 tomatoes while the crust is Pre-baking
Layer the tomatoes in a colander and sprinkle with kosher salt. This will help release the liquid in the tomatoes. Every few minutes, press the tomatoes down with a paper towel.
Press as much juice from the tomatoes using paper towels
Chop 3 green onions and about 10 basil leaves
Start layering tomatoes with green onion and basil
Combine 1 cup mayo, 1 cup shredded cheddar, and one cup shredded mozzarella and put it on the top.
Bake at 400 until golden and bubbly.
**You could also add some chopped cooked bacon, because why not?
Let cool slightly before slicing.
This is so southern. It would go great with a simple mixed green salad and some sweet tea. It totally makes me want to say things like “come on, y'all and have some tomato pie”. This would be the first time that phrase would pass my lips.
