Our greens zebra tomatoes are ripe. Green Zebras are green with white stripes that turn yellow when ripe. This tomato was introduced in the 1980's. I have been wanting to have Fried Green Tomatoes and my mom cooked some for us today. So delicious. Here is how she made them.
Bev's Fried Green Tomatoes:
Heat canola oil 1/4 inch in cast iron skillet
Slice some green tomatoes
Make 3 plates/bowls with the following:
Bowl 1- flour, cayenne pepper and kosher salt
Bowl 2- 2 beaten eggs with 2 tablespoons of water
Bowl 3- 1/2 sleeve chopped ritz crackers
The Process…..
Take a tomato slice, dip in flour, dip in egg, dip in ritz, put in pan.
Enjoy!
PS – this works great with eggplant. We did that too.
