Summer Tomato Pasta with Feta

My husband was so impressed when I whipped this up for dinner the other night. I used all different colored tomatoes like this:

You could make this with whatever tomatoes you have on hand. I am just lucky to have such a variety.

Summer Tomato Pasta with Feta

Ingredients:

5-6 peeled and chopped tomatoes

Couple handfuls of spinach

Package of pasta (I has some sort of shell, but almost anything would work)

3-4 cloves of garlic, minced

2 cups of feta (or to taste)

1/4 cup olive oil

1/3 cup cream

 

Here is what I did. This is not a precise recipe, you could alter any of it. I think adding black olives would be good too.

 

Prepare tomatoes

 

Heat water

 

While water is heating, mince garlic. In a small saucepan, heat olive oil and sauté garlic until fragrant.

 

One water is boiling cook pasta and then drain.

 

Put pasta back in pan and heat over low. Add olive oil and garlic, stir. Throw in raw spinach (it will wilt as you stir). Then, add tomatoes and heat until the tomatoes are hot and spinach is wilted. Stir in cream and too with feta. I use lots of feta…..Fresh basil on top is nice too.

We loved this so much. I am freezing bags of tomatoes to make this all year long.
