Grilled Bread and Tomato Salad

A version of this recipe was given to me by a friend last week. I changes a few things based on what I had in hand, and it was delicious. You should make this before tomato season is over.

Grilled Bread and Tomato Salad

Ingredients:

4-5 fresh tomatoes (mixed colors)

Couple handfuls of cooked green beans (optional)

1 French baguette, sliced 3/4″ thick

 

Vinaigrette:

2 tablespoons fresh chopped basil, Italian parsley, oregano, chopped shallots

2 cloves garlic, chopped

3/4 olive oil

1/3 c sherry vinegar

Feta to taste

 

Method:

1. Pre-heat grill

2. Make vinaigrette

3. Brush both sides of sliced bread with vinaigrette

4. Grill bread on both sides until toasted

5. Let bread cool, then cut in bite-sized pieces

6. Core tomatoes and cut into wedges

7. Mix, tomatoes, green beans, vinaigrette and top with feta

 

 

The big news is I ordered a vitamix today. Can't wait to get it!
