The Vitamix Chronicles Part 3 / Roasted Tomato Soup with Goat Cheese

Lycopene is the what makes tomatoes, watermelon and other red fruits red. It is an antioxidant that helps the body fight disease. This includes several types of cancer and eye-disease.

If you like tomato soup, this recipe is for you.

Pre-heat oven to 425

First, cut up tomatoes and onions and toss on  a jelly roll pan (baking sheets with sides)

Then I take a head of garic and cut the top off and put it on the pan

Drizzle olive oil, kosher salt, and fresh ground pepper

Roast in oven until it looks like this:

Pour all this goodness into the vitamix except the garlic. Squeeze out 2-3 roasted garlic cloves into the vitamix.

Add 1/2 cup of chicken stock, 5-8ish fresh basil leaves and 2-3 tablespoons of goat cheese.

Now blend on high for a few minutes, and you have a tomato soup like you have never had!

If, you don’t like goat cheese (gasp), omit it and add 1/8 cup half & half.

P.S. This is awesome with a grilled cheese;)
